Vegetable benefits

Better Nutrition,  Oct, 2004

Vegetable Benefits: A study at the University of Milan has found that women who eat more red meat and less produce are at a much greater risk of endometriosis. The Italian scientists also concluded that phytoestrogens--available in soy, dark green leafy vegetables, nuts and legumes--reduce levels of estrogen in the blood, protecting against endometrial and ovarian cancer.
