New source of omega-3s

British biotechnologists say their newly developed, genetically modified cress-like vegetable may help relieve the growing pressure on depleting fish stocks. They created the new strain of Arabidopsis--a relative of the cabbage--by adding two genes from algae and a third from a fungus. The gene-altered vegetable contains more omega-3 and -6 fatty acids than normal varieties.

Also, the oil-rich plants are contamination-free--unlike fish, which can contain mercury and PCBs. And although fish oil is usually purified to remove any pollutants or metals, this new source is ideal for vegetarians. Other plant sources of omega oils include hemp seeds, canola, walnuts, soy and especially flaxseeds; but this is the first genetically created source.
